One of the things I missed the most when becoming vegan was eggs. I was actually quite surprised by this because I didn’t eat eggs regularly, but I found myself craving them for a long time after I gave them up (that was actually the first thing I gave up when I decided to become vegan!).

I am happy to say that I have created a version of fried eggs that is totally vegan and delicious, and it actually satisfied any craving I had for the texture (and taste!) of eggs. Hint: nutritional yeast, turmeric and black salt do the trick!

I think my biggest surprise was that my son loves this dish! He usually pairs it with rice rather than eating it as a sandwich.

If you’ve never heard of black salt, it’s actually called kala namak, and in my opinion is the spice that gives this dish the egg taste.

You can create your own concoction of spices with these ingredients but my secret weapon is using the Tofu Scramble Spice Mix from FreshJax. It’s so easy and you can make this in no time!

Instructions

Step 1

Mix all spices OR Tofu Scramble Spice Mix with water in a shallow bowl.

Step 2

Add 1 TBSP of coconut oil to a skillet set to medium heat.

Step 3

Cut tofu block by placing it standing on its side, and cutting across twice to make 3 thin slices. Then slice them all in the middle. You will end up with 6 equal rectangles.

Step 4

Place each tofu piece in the spice mixture and make sure they are all covered.

Step 5

Once skillet is hot and coconut oil is melted, place 3 slices of tofu in skillet and cook until crispy. Flip them carefully with a sturdy spatula and cook the other side the same way.

Step 6

Remove from skillet. Repeat with remaining slices and add more oil if needed so they don’t stick to the pan.
